Traditionally they are perfect just harvested, emptied, boiled in vinegar for a few seconds and then stuffed by hand, one by one.

This detailed, traditional and lengthy preparation make them an important product, perfect as a starter, vegetables or perfect to flavour sauces and bruschette.(toasted bread rubbed with garlic or something else and sprinkled with olive oil).
