Suggestions: basic ingredient for the preparation of excellent omelettes without egg, of chickpea pancake or classic farinata (chickpea flat bread)

Mix 900ml of water with 300g of flour and let stand for 5/6 hour. Remove the foam on the surface, add half a cup of olive oil and salt to taste Cover the bottom of the pan with hot oil, pour the mixture and bake at 220 degrees for 30 min. To brown the surface with the grill, add salt and pepper.
