The tajarin or egg tagliatelle are one of Piedmont specialties. Are of the species of tagliatelle but much finer. Always the tajarin are paired with truffle just because the two flavors blend perfectly

Suggestions: Good only with olive oil or with walnut sauce or with nutmeg, butter and pepper. Perfect with truffle oil, truffle cream and mushrooms or truffles sliced
