The tajarin or egg tagliatelle are one of Piedmont specialties. Theyare species of tagliatelle but much finer. The Tajarin Nonno Mario are produced with 35% of fresh eggs which enhance the flavor and give the classic and distinctive deep yellow color.

Suggestions: Excellent seasoned only with olive oil or butter with sage or with a good sauce. The dish par excellence sees the tajarin flavored with a good truffle oil and slices of fresh truffle.
